Easy & Cheap Nourish Bowl


I had been preparing vegan meals every day for an entire week. At the end of the week, I had a few meals left over. Black beans from making black bean tacos were in my refrigerator, along with the lettuce and tomatoes used to garnish them. Then there was leftover rice from the vegetable stir fry I had made, and the rest of my vegan fajitas. I wanted to make a quick meal and did not want to waste all these leftovers, so making something new was out of the question. 

I researched how to incorporate all of my leftovers into one dish, and I discovered nourish bowls on Pinterest. Certainly, I am familiar with bowl recipes, being that vegan burrito bowls are one of my favorite vegan go-to meals. Needless to say, the nourish bowl was a success. I was able to make a quick and easy dinner, use all my leftovers, and not waste any food.
