Egg Muffins For Breakfast Meal Prepping

Breakfast is often considered the most important meal of the day. Some of us are busy and might not have time to prepare anything in the morning. For a mom, a college student, or a career woman, grabbing a cup of coffee in the morning is often a necessity. However, I have read many health articles that explain you should eat first before consuming caffeine, so that may not be an option. If you are busy getting ready to go to work, preparing to go to the gym, or on the way to drop your kids off at school, meal prepping breakfast may be ideal.

Egg Muffins are my new go to for meal prepping breakfast. Egg Muffins are extremely affordable while being quick and easy to make. While there are many versions of egg muffins, I add vegetables to my egg muffins. In order to keep this recipe affordable, I do not go to the store and buy new vegetables to add in; I use what I have on hand to keep from wasting vegetables in the fridge that may be going bad.

I also love to make egg muffins as my post gym meal. After exercising, oftentimes I do not feel like cooking anything when I get home, but I know I need to eat something. I prefer it to be a meal high in protein. It is extremely convenient to heat up two or three egg muffins after the gym; sometimes, I might even eat them before I head out to the gym.
