Vegan Fajitas
When I changed my diet and wanted to incorporate more plant-based meals, vegan fajitas were my go- to. For someone who is new to a plant-based diet, vegan fajitas are a quick and easy lunch or dinner. Vegan Fajitas are affordable and filling. Even if you are not a vegan, this recipe is ideal for someone who is participating in "Meatless Monday".
What You'll Need...
Olive Oil
Bell Peppers
Onions
Mushrooms
Fajita Seasoning
Seasonings Of Your Choice
Tortillas
Directions...
1. Begin by heating up your olive oil in a pan.
2. Add your peppers, onions, and mushrooms into the skillet.
3. Allow your vegetables to cook, then add in your fajita seasoning.
4. Continue to cook until the vegetables are to your liking.
5. Enjoy!
Vegan Fajitas cost only about five bucks and you can meal prep them as well.
You can switch up this recipe if you'd like to; instead of mushrooms, you can use tofu or chickpeas. Sometimes I opt not to use mushrooms, and I make my vegan fajitas with only bell peppers and onions.
